Preheat an oven to 160c. Chop the apples into 2cm chunks, removing the core but keeping the skin on. (= ~480g chopped apple)
In a saucepan on medium heat, add the apples, sugar, cinnamon, vanilla and water. Cook for 20 minutes or until the apples are soft.
Stir the mixed berries into the apple mix and cook for a further 10 minutes.
In a food processor or blender, blitz all crumble ingredients until a chunky crumb is formed.
In a baking dish/small casserole pan, pour the apple mixture in and top with the crumble. (*Instead of spreading the crumble on, I break little bits up and sprinkle it over to create a nice texture)
