Healthy Apple and Berry Crumble

Ingredients
  

Filling

  • 4 pink lady apples large
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 cup water
  • 1 1/2 cups mixed berries

Crumble

  • 1 1/2 cups oats or quinoa flakes for gluten free
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 3 tbsp rice malt syrup
  • 3 tbsp olive oil
  • 50 g walnuts

Instructions
 

  • Preheat an oven to 160c. Chop the apples into 2cm chunks, removing the core but keeping the skin on. (= ~480g chopped apple)
  • In a saucepan on medium heat, add the apples, sugar, cinnamon, vanilla and water. Cook for 20 minutes or until the apples are soft.
  • Stir the mixed berries into the apple mix and cook for a further 10 minutes.
  • In a food processor or blender, blitz all crumble ingredients until a chunky crumb is formed.
  • In a baking dish/small casserole pan, pour the apple mixture in and top with the crumble. (*Instead of spreading the crumble on, I break little bits up and sprinkle it over to create a nice texture)
  • Bake in the oven for 30-35 minutes.
